Bacon Wrapped Jalapeño Popper Stuffed Chicken
Personally, I am a fan of bacon, cheese, chicken and peppers! That is why this dish got my attention from the very second I saw it! It is no under statement to say that the ingredients in this chicken, will cause you to have an explosion of flavor in every single bite!
What is great about this dish is that it’s simple to make and at the same time awesome due to the tasty ingredients it has. The most complicated thing this dish has is the stuffed chicken breast. Don’t worry however you do not need to fuss a lot, to stuff the breast you can do one of two things. Choice number one is to open the breasts, and stuff the chicken with the ingredients in the recipe at the end of this article. Finally, close the breasts. The second option is to make a whole in the middle of the breast and introduce the ingredients through that. This has jalapeño peppers but you can substitute them with chipotle peppers. If you do not like spicy food you can add red peppers instead. The cheddar cheese gives to this dish a special flavor, and the cream cheese gives a creamy and delicious taste. Feel free to stuff the chicken with the favorite ingredients you desire. Adding other ingredients will give it that special twist. A suggestion, this recipe would work out really well with mozzarella cheese or Monterrey Jack Cheese.
I encourage you to experiment on your own. There are many ways to cook this dish. You can cook in a stainless steel pan or if you want to have a better result, in the oven. It’s sure that you will love this dish, just imagine, the chicken is stuffed with cheese and pepper. Besides that the chicken is wrapped with bacon! Doesn’t everyone love bacon? 4 small chicken breasts, pounded thin salt and pepper to taste
4 jalapenos, diced
4 ounces cream cheese, room temperature
1 cup cheddar cheese, shredded
8 slices bacon
Lay the chicken flat, season both sides with salt and pepper, place 1/4 of the mixture of the jalapenos, cream cheese and cheddar on the chicken and roll them up.Wrap each chicken breast up in 2 slices of bacon and place them in a baking dish.Bake in a pre-heated 400F oven until cooked, about 25-35 minutes.
