Beef & Bean Chili

I know everyone is experiencing the cold winter nights nowadays and believe me it truly makes us all lazy and just stay under the sheets for the whole day and hibernate the whole winter through. But if you feel like doing something which will have you feeling warm and at home try this beef and bean chili which will surely be perfect for these nights.

Chili has been a great staple in everyone’s home ever since and I can assure you to be very delicious and inviting no matter what time of day you’d eat it.

What makes this recipe even more special is that it has this very special ingredient…the freshly brewed coffee, which is in fact the one that will add that kick that you need in this chili. Ingredients

¼ cup vegetable oil

2 ½ pounds beef chuck, boneless and diced into quarter inch pieces

Salt and pepper to taste

3 medium onions

7 cloves garlic

1/3 cup chili powder

1 teaspoon oregano, dried

1 tablespoon tomato paste

1 can crushed tomatoes

2 cups beef broth

1/3 cup freshly brewed coffee or espresso

2 cans pinto beans

Topping:

Shredded Cheddar cheese

Sour cream

Diced avocado

 

Directions

1. Season your beef with salt and pepper then sear in a large hot pot with vegetable oil till browned on all sides then set aside.

2. Add more oil to the pot then saute your onions and garlic for around 5 minutes. Add in your chili powder, oregano and tomato paste while stirring frequently.

3. Add in the meat back into the pot along with your tomatoes, broth, pinto beans and coffee. Bring to a boil and simmer for around 2 hours or until beef is tender.

4. Serve into bowls and top each with shredded cheese, sour cream and avocado.
