Buffalo Chicken Salad

I guess I got your attention already and believe me I can eat this salad daily and still enjoy it. Everybody loves buffalo chicken wings right? How about incorporating the buffalo flavors into a salad and making the dip into a dressing, that sounds super exciting and delicious.

Salads as I said are usually boring; that is if you do it wrong and not understand the aesthetics and flavor combinations of the said dish. However if done correctly and perfectly, it may be one of the best meals you will ever make and taste in your life!

Ingredients

1 chicken breast, boneless and skinless

1 tablespoon hot sauce (any brand you fancy)

1 teaspoon olive oil

1 heart romaine lettuce, cut into strips

2 celery stalks, sliced thinly

1 carrot, grated coarsely

1 scallion, sliced (green part only)

For the Dressing:

1 tablespoon mayonnaise

2 tablespoons buttermilk

2 tablespoons yoghurt

½ tablespoon vinegar

¼ teaspoon sugar

2 tablespoons blue cheese, crumbled

Salt and pepper to taste

 

Directions

1. Make your dressing by whisking together the mayo, buttermilk, yoghurt, vinegar, sugar blue cheese and season to taste with salt and pepper. Set aside in the chiller.

2. Pound your chicken breasts and sliced into strips then marinate for around 30 minutes with the hot sauce and oil. Broil or saute in oil the chicken until cooked then arrange your lettuce, carrots, celery and scallions on a plate with the cooked chicken on top. Pour in your dressing and serve. Enjoy!
