Caesar Salad with Grilled Shrimp

One of the most common and classic salad is the Caesar and believe me almost all restaurants have their own version. However only a handful can make a really good Caesar Salad (especially the dressing). This salad is super simple and super healthy and delicious. It requires very minimal ingredients but could keep you filled without the guilt of having too much since this dish is truly healthy.

In my version of this classic dish, I’m adding some grilled shrimps to add that extra bite and zing to your everyday salad. This could be a great lunch or dinner at any day and as for me I could even eat this daily if time permits.

Ingredients

2 egg yolks

½ teaspoon minced garlic

1 teaspoon anchovies

1 teaspoon mustard

¼ teaspoon Worcestershire sauce

6 teaspoons lemon juice

¼ cup olive oil

4 tablespoons parmesan cheese, grated

Salt and pepper to taste

8 cups romaine lettuce, torn

1 cup croutons

10 shrimps, seasoned with salt and pepper

 

Directions

1. Make your dressing by whisking together the egg, garlic, anchovies, mustard, Worcestershire and lemon juice. Add in your olive oil a little at a time to prevent your dressing from breaking. Season with salt and pepper to taste.

3. Arrange your salad by arranging the lettuce on the plate then spreading the croutons around. Top your grilled shrimps and pour in your dressing on top. Sprinkle with parmesan cheese then mix everything together to coat and serve.
