Crustless Cranberry Pie

Cranberries are abundant during Fall and is a staple in every household’s Thanksgiving feast. What most of us don’t know is that cranberries are in fact superfoods which are generally high in antioxidants and is well known to prevent heart disease.

The cranberry is mainly grown in America and Canada which is why this fruit is so abundant and used widely in almost all recipes from around America.

This recipe I have for you is a great Thanksgiving dessert with in season cranberries blended with some walnuts to further enhance the taste and give it that crunch missing in this Crustless Cranberry Pie. Ingredients

1 ½ cup all-purpose flour

1 ½ cup Bourbon Vanilla sugar

1/3 teaspoon salt

3 cups cranberries

¾ cup walnuts, chopped

¾ cup butter, melted

3 eggs

1 ½ teaspoon almond extract

Directions

1. Grease your pie plate and preheat your oven to 350 degrees F

2. In a large bowl mix in your salt, sugar and flour then add in the walnuts and cranberries to mix evenly. Add in the almond extract, eggs and butter then pour in your greased pie plate.

3. Bake the pie in your preheated oven for around 40 minutes and check with a skewer by inserting it in the center and if it comes out clean meaning its done. Serve with whipped cream or vanilla Ice cream for added richness.
