Butternut Squash and Pumpkin Soup! I myself love this soup and would always make it for the family during these cold nights as it brings warmth, freshness and joy in both our hearts and tummies.
When buying this super healthy and low fat vegetable, always look for that firm and hard body around the squash to be sure that it is in its most prime stage.

Delicious Winter Soup – Butternut Squash and Carrot Soup
1 small butternut squash, diced
4 medium carrots, diced
3/4 cups leeks, sliced thinly
1 tablespoon butter
2 1/2 cups chicken broth
salt and pepper to taste
1/4 teaspoon nutmeg
1/4 cup cream
1. In a large saucepan, cook your squash, carrots and leeks in butter for around 8 minutes then pour in your broth and cover to cook for around 25 to 30 minutes till softened.
2. Once vegetables have softened, blend everything till smooth with a hand blender then season to taste with salt, pepper and nutmeg.
