The Tapsilog is the most famous Filipino breakfast dish and favored by most Filipinos as their feel-good food which will remind them of home. This term is actually derived from three words which make up the dish, first is the TAP – for the Tapa (Cured beef), then the SI – for the Sinangag (Fried Rice) and lastly the LOG – for the itlog (Eggs).
The Tapa has many variations depending on the region in the Philippines, but basically all are made by either marinating or by drying them out in the sun. The version I have here with you is the marinated one since that the sun nowadays isn’t that hot due to the changing of the seasons.
Another great tip for this recipe is to eat it with a dipping sauce called Sinamak which is basically spiced vinegar with chilies, ginger, garlic and galangal. Enjoy this meal and be prepared to have your tummy full till lunchtime as this is one heavy and filling breakfast.

For the Beef Tapa:
½ pound beef sirloin
2 tablespoons vinegar
1 ½ tablespoons soy sauce
½ teaspoon cracked black pepper
½ tablespoon rock salt
¼ cup brown sugar
5 cloves garlic, smashed
For the fried rice and sunny eggs:
1 cup day old rice
2 teaspoons garlic, chopped
Iodized salt to taste
