Grilled Chicken with Succotash

I recently came across this great new recipe and have cooked it a lot of times already. Its very easy actually and guess what, its only under 400 calories per serving! What’s even better is that the ingredients are readily available everywhere and can be cooked in a jiffy.

Grilled chicken breast is basically my go to protein in terms of healthy eating and I would have it any time of day everyday if I can as it has a generous amount of protein and very low percentage of fat. By also pairing it with succotash which is a very healthy vegetable dish makes it even more desirable and keep us all from guilt. Surely both our tummies and hearts would be very happy with this simple yet flavorful dish packed with nutrients for a healthy lifestyle.

Ingredients

3 teaspoons chili powder

½ teaspoon each of salt and pepper

4 chicken breasts, boneless and skinless

6 teaspoons olive oil

¾ cup white onions, chopped

3 cloves garlic, chopped

1 whole bell pepper, sliced

1 ½ cup frozen corn

1 ½ cup lima beans

2 – 3 tablespoons balsamic vinegar

¼ cup water

Chopped parsley for garnish

 

Directions

1. Season your chicken with some olive oil, chili powder, salt and pepper and grill in preheated grill till done but not overcooked.

2. While the chicken is grilling, saute your onions, garlic and bell pepper in a pan till translucent then add in your corn, beans and balsamic vinegar. Let this reduce for around 5 minutes then pour in your water and cook till it’s a little bit reduced.
