Healthy Mac and Cheese

What I did here is not sacrificing flavor but rather used great ingredients which will substitute the usual unhealthy and high calorie ingredients with lighter and lower fat ingredients.

The Mac and Cheese has been a staple in every household and has over a thousand variations from around the world.  From including meat, vegetables or even some exotic ingredients, However what I have here is the classic recipe improved to taste as is or even better and healthier. Ingredients

12 ounces macaroni, cooked

¾ cup chicken broth

3 teaspoons butter

1 shallot, chopped

6 teaspoons flour

½ cup skim milk

1/3 cup sour cream, low fat

2/3 cup low fat mozzarella cheese, shredded

Parmesan cheese

Salt and pepper to taste

Parsley, chopped

 

Directions

1. In a large pot saute your onions in butter till softened and add in your flour till fully incorporated. Pour in your milk and water and cook till thick, around 2 minutes.

2. Whisk in your sour cream, parmesan cheese and mozzarella cheese till melted then season to taste with salt and pepper. Add in your cooked pasta, mix well and pour in a baking dish.

3. Sprinkle more parmesan and mozzarella cheese on top and bake in a 350 degree F oven till melted and browned on top. Garnish with parsley and serve.
