Most of you have heard about the buzz of Mason Jars but for those who haven’t here’s a little round up of what’s it all about; Mason Jars are usually used to store pickled vegetables or any type of food which should be stored air tight as this container will keep anything fresh longer. However, someone with a very brilliant idea figured out a very simple way to serve salads in it which gives it easy storage and can be made in advance.
Salads are great for lunch and most of us who never have time to cook up a meal to bring to work are given this great option where you can prepare them during the weekend and have a whole week’s lunch worth of salads or even main dishes with you in “Mason Jars”.
So enjoy this great Italian inspired salad recipe I have for you which is truly healthy and will give you that satisfying and filling meal for any type of day.
1 mason jar, preferably 5 quarts
2 tablespoons balsamic vinegar dressing (or any vinaigrette of choice)
3 grape tomatoes, halved
2 ounces fresh mozzarella, cut into bite-sized pieces
½ cup whole grain pasta, cooked
2 cups baby spinach
2. Add your tomatoes next, this is to shield the other ingredients from being wilted by the dressing and for the tomatoes to be marinated in it too.
3. Add your fresh mozzarella and top with your pasta
4. Lastly pack the spinach leaves on top and cover tightly. You may refrigerate this salad for up to 4 days.
