Pappardelle In Saffron Cream

Okay guys this is the month we’ve all been waiting for, the month where we treat our girlfriend or wife super extra special with some wine, dinner and lots of chocolate. On this month most have been doing some crash course cooking just to impress their girl.  However you may be lucky as I will share with you one of my most loved pasta dish for Valentine’s day or whatever the occasion may be as long as it’s good for two.

Pappardelle is a wider type of pasta which looks kind of like a linguine but around 4 times wider. I don’t really know what it is about pappardelle but it has been really a great table for two dish on which most of my customers love it so much! There have been a lot of versions of this as well but nothing really comes close to a saffron cream sauce which is just so sexy even by the name itself. Ingredients

Sea Salt

2 teaspoons butter

1 teaspoon shallot

Pinch of saffron

½ cup heavy cream

Salt and pepper to taste

¼ teaspoon lemon juice

¼ teaspoon vanilla extract

4 ounces dried pappardelle

Garnish:

Parmesan Cheese, Grated

Chives, chopped

Lemon zest

 

Directions

1. Cook your pasta in salted boiling water according to packet’s instructions until al dente (firm to the touch).

2. In a separate pan melt your butter and saute in the shallots. Add in your saffron threads, heavy cream, salt and pepper to taste. Increase the heat and cook till slightly thickened then add your lemon juice and vanilla.

3. Once pasta is cooked, drain and add into the sauce along with some pasta water to dilute the sauce until desired consistency. Serve on plates garnished with chives, parmesan cheese and lemon zest. Pair this with some light and crisp white wine to enhance the flavors of your dish, enjoy!
