Well here are the ingredients I have

Ingredients

3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour

Method

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

10 Minute Banana Bread
Makes 1 full-sized loaf or 2 small loaves

Preheat the oven to 350.

In one bowl, combine:

1/2 stick (4-5 tablespoons) butter, softened
2 eggs
2 or 3 very ripe bananas
2/3 cup sugar

Use a potato masher, fork, or spoon to squish the banana and mix the ingredients together. It is alright for there to be small (1 centimeter) chunks of banana in the batter, but you want most of the banana to be reduced to mush.

In another bowl, combine:

1 1/3 cup all-purpose unbleached flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon cinnamon (optional)

Combine the wet and dry ingredients and mix until the ingredients are blended together.

If you like, stir in additional ingredients here, such as chopped walnuts or pecans, dried cherries or apricots, or chocolate chips. A handful (about a half a cup) is about right.

Pour the dough into greased baking pans and bake until a toothpick inserted in the center comes out clean. Small loaves take around 30 minutes, a normal-sized loaf takes around 50 minutes.

Remove from the oven. This bread is great warm, but it is excellent cold too.

After they have cooled for 5 or 10 minutes the loaves can be removed from the pan to cool. Once they are cool they can be individually wrapped and frozen.

    3 eggs
    1 ¼ cups sugar
    2/3 cup of oil
    3 ripe bananas smashed into paste with a fork
    2 cups flour
    1 teas baking soda
    ½ teas baking powder

    ¼ cup milk with 2 teas of apple cider vinegar added
    ½ teas vanilla
    1 cup chopped walnuts (1/4 cup gets sprinkled on top of batter before baking)

    Mix together eggs, sugar, oil and bananas. Add flour, b.soda and b.powder, mix to just incorporate. Add milk/vinegar mixture and vanilla. Stir in nuts. Pour into 3, 8x3x2 medium size foil loaf pans that have been sprayed with non stick like bakers secret or pam. Pans will only be ½ filled. Sprinkle remaining nuts on top and bake 325 for 50 min.
