Shrimp and Romesco Spaghetti

Romesco is a Spanish sauce which is made with bread, roasted peppers and almonds. It looks more like pesto as it is made the same way where you pulse everything together till it will be fine then seasoned with salt and pepper.

As you all know shrimp is one great protein for Spanish flavors especially with paprika. Not only is this protein low in calorie content and fat, it also helps us in our daily diet. I myself would eat shrimp everyday if I can, Just some salt and pepper would do the trick.

When buying shrimp, make sure that you buy them fresh as much as possible and not frozen as these will have all those flavors of the sea packed in its flesh. Also this is where the flesh is at its most juicy and white state.

7 large shrimp

½ pound linguine, cooked

½ cup roasted red pepper, jarred

¼ cup almonds

3 tablespoons bread crumbs

1 tablespoon sherry vinegar

2 cloves garlic, chopped

¼ teaspoon paprika

3 tablespoons olive oil

Salt and pepper to taste

1. Make your romesco sauce by pulsing the red peppers, breadcrumbs, almonds, vinegar, garlic and paprika then season to taste with salt and pepper.

2. Season your shrimp with salt and pepper then pan fry in olive oil. When shrimp is cooked, pour in the romesco sauce, some water to loosen it up and the pasta to cook.
