Chili, one of the most comforting hot food for these cold nights. I promise that your weekends will be much better with this warm and healthy dinner.
Chili is usually made with ground beef and other vegetables, but ever tried making it with Turkey? Yes you heard me right, turkey! As you know, Turkey is one of those proteins which have the least amount of fat especially the breast part. So why not try making this super delicious chili with Turkey and Squash instead.
This dish may take some time to make but trust me no matter how much chili you cook, it will always be finished to the bottom of your pot. 1 ½ teaspoons olive oil
½ pound ground turkey
1 small onion, diced
2 cloves garlic, chopped
2 tablespoons chili powder
2 teaspoons cumin
1 teaspoon coriander
1 ½ tablespoon tomato paste
2 cups diced, peeled and seeded butternut squash
2 tomatoes, chopped
1 can black beans, drained
Salt and pepper to taste
1 tablespoon white vinegar
1. Saute your Turkey in a pot with oil for around 5 minutes till browned. Add in your onions, garlic, chili powder, cumin and coriander and cook for about 3 minutes. Add in your tomato paste, squash and tomatoes to cook for about a minute then pour in 2 cups of water. Cook for around 30 minutes till chili has started to thicken and your squash has softened.
2. Add in your beans and vinegar into the chili and season to taste with salt and pepper.
3. Pour into bowls and garnish with some cilantro leaves and a spoonful of sour cream, serve and enjoy!
