Today is the day we say thanks for all the blessings in our life and for everyone who has contributed to our well being. However I doubt it if any of your friends and family will be able to help you out with the leftovers due to their super full stomachs right…?

So come and dive in with me on this very tasty and light Turkey Frittata which you could make for your breakfast tomorrow and you can even throw in some sausages, ham or bacon to go along with it as well as some toasted and butter filled bread.

3 teaspoons olive oil
1 small onion, chopped
1 medium bell pepper, chopped
2 large boiled potatoes, peeled and chopped
1/2 cup Turkey, Leftover from Thanksgiving
6 large eggs
4 tablespoons cream
2 tablespoons parsley, chopped
1/2 cup mozzarella cheese, grated


Turkey Frittata
1. In a large pan, Saute your onions, bellpepper and potatoes until well browned around 5 minutes then add in the left over Turkey.

2. In a Mixing bowl beat your eggs, cream and season to taste with salt and pepper. Pour in an oiled skillet and add in the herbs.

3. Top with grated cheese and finish off in the broiler or in an oven to fully brown and cook through, enjoy this healthy and filling breakfast anytime!
