Winter Minestrone Soup

Winter is here and the cold nights are starting to zoom in. You may find yourself looking for some hot and hearty soup for dinner during these times to warm your soul and body.

As a kid I really loved Minestrone as it has that complete components and ingredients anyone would be looking for in a soup, the potatoes, carrots, celery, beans, tomatoes and most especially the “Bacon” which I generally agree that you won’t go wrong with.

So instead of calling the local Chinese delivery or any other hot pot and ramen place for some take-outs, why not make this traditional Italian soup filled with all the goodness and benefits it brings rather than some MSG filled broth…

Ingredients

3 tablespoons olive oil

1 medium onion, chopped

¼ pound bacon, chopped

2 carrots, chopped

2 celery sticks, chopped

1 large potato, chopped

3 cloves garlic, chopped

1 can chopped tomatoes

1L vegetable broth

Pinch of sage and parsley

1 cup shredded cabbage

½ pound haricot beans

 

Directions

1. In a large pan saute your bacon and onions in olive oil for around 5 minutes then add in your carrots, celery, potato and garlic.

2. Add in your canned tomatoes and herbs, bring to a boil and simmer for around 30 minutes.

3. Lastly add in your cabbage, beans and season to taste with some salt and pepper then serve. If you wish you may add some pesto croutons wherein you will need some bread and spread it evenly with some pesto then toast and break up into chunks to top in your soup. Enjoy!
